Ingredients
Required ingredients by volume:
- 5 cup rolled oats (6 cups if you're skipping nuts)
- .5 tbsp vanilla extract
- .25 cup oil (eg. vegetable oil, peanut oil, coconut oil)
- .75 cup liquid sweet (eg. honey, agave, maple syrup, fruit jam)
Optional ingredients by volume:
- 1 cup sticky (eg. peanut butter, banana, apple sauce, pumpkin puree, wet coconut flakes)
- 1 cup small nut pieces (eg. walnut, pecan, almond, peanut, hazelnut)
- 4 tsp extracts/spices (eg. almond extract, cinnamon, cocoa, pumpkin spice mix)
- .75 cup dried fruit (eg. cherries, apricots, raisins, apple slices, dates)

Instructions
- Preheat the oven to 350º F (175º C).
- Combine the oats, vanilla, oil, liquid sweet, optional sticky, optional nut pieces, and optional extracts/spices in a mixing bowl until there aren’t any dry oats left and the ingredients are thoroughly mixed.
- Place the mixture on a large, flat, rimmed baking sheet and flatten as much as possible.
- Bake for 15 minutes then remove from the oven to stir and flatten again. Bake/stir/flatten for progressively smaller baking intervals until the oats are done (I usually bake for 15 minutes, 12 minutes, 8 minutes, 5 minutes, 5 minutes). The oats are done when they’re mostly dry (not chewy) and a golden brown color. If all of the oats/nuts in one part of the pan are starting to look burnt, the rest are probably done.
- While the oats are baking, mince the optional dried fruit.
- When the oats are done baking, mix them with the optional minced dried fruit.
